This wine has an elegant and soft structure. Very good with fish dishes, white meat, young ovine with truffle. Excellent with pelagic fish or with goose foie gras.

Predominance of sand and miocene and pliocene clays, tending towards limestone.
Soft pressing and brief cold maceration of the skins for a portion of the grapes, with selected yeasts, and of a portion in Barrique Allier, followed by holding on the pulp. The wine is refined for 10 months in the cellar and for 16 more months in the bottled in a temperature-controlled setting.
Sharp yellow straw colour with green tints, vergings on glod with maturation; bouquet of mature fruit and meadow flowers, with perceptible scent of bitter almonds. The gentle, harmonious taste gives off delicate, fruited hints.
It is best when consumed 2 or 3 years following harvesting.
