The soil is made by clay and lime with a rather low active layer; so it's not so fertile, giving scarce yield but top quality.
The grapes, harvested by hand, are removed from the stalks and soft pressed. The must is fermented in temperature-controlled steel tanks. The skins are macerated for some days for some days for giving colour and good body and the wine is racked when it is almost completely dry.
